Ingredients:
2 cups a/p flour
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/2 c. sugar
3/4 c. butter
1 egg
1/4 molasses
1 - Preheat oven to 350F. In a medium bowl, which flour, baking soda, cinnamon, nutmeg and salt.
*put 1/2 cup of the sugar aside in a separate shallow bowl*
2 - With an electric mixer, beat butter and remaining cup of sugar until light and fluffy. Beat in egg and molasses. Reduce speed and gradually add dry ingredients, mixing until a dough forms.
3 - Use a tablespoon to measure out evenly sized cookies. Roll into balls and then roll each ball in the 1/2 cup of sugar that you set aside until they are coated all the way around.
4 - Line your baking sheet with parchment paper and arrange the balls a couple inches apart from each other. Bake for 10 - 15 minutes. Cool on wire rack.
*You don't need to press them down with a fork or anything, they will spread out and have a neat crackle pattern. Also, the cookies will look more even if you only bake one sheet at a time.
*To make sure they stay chewy, put them in an air tight container as soon as they are cooled.
